The climate in Santorini is usually high; from May to November the temperature is above 20°C. The highest temperature is in July-August, ranging from 29°C-31°C. Coming to Santorini in those latter months will definitely tan your skin! Tip:  It is advised to drink bottled water during the holidays in Santorini because of a shortage of water. Sometimes the water supplies can be salty.
